Description 750ml Boutique Wine – Nelson, New Zealand Immediately appealing on the nose displaying fresh pear, nectarine and floral characters, followed by a juicy palate that is beautifully rounded and smooth with a hint of sweetness which is nicely balanced by crisp acidity. A very likable Pinot Gris offering lovely pristine fruit flavours. The gentle acidity and marked fruitiness of this well balanced Pinot Gris perfectly complements roast pork with a stewed pear sauce, or match with creamy pastas, poultry and seafood. VARIETAL: Pinot Gris 2016 VINEYARD: Estate produced, Brightwater, Nelson HARVEST: April 2016 YIELD: 9 tons per hectare BARREL AGING: Nil, stainless steel ALCOHOL: 12.8% RESIDUAL SUGAR: 7.5g/L PH: 3.48 T/A: 6.0g/L FERMENTATION: The grapes were destemmed at the winery without any further crushing, then gently pressed to minimise unattractive phenolics. After pressing the juice was cold-settled to achieve low solids prior to ferment. The clarified juice was inoculated with Alsatian yeast strains to provide good aromatic definition. Long cool fermentations in stainless steel ensured fruit-driven flavours were preserved and varietal characteristics enhanced. Some ferments were stopped prior to dryness, to allow for a splash of natural residual sugar in the final blend. After ferment much of the juice underwent lees-stirring to create an all-important textural component, filling out the mid-palate. The wine was minimally fined, stabilised and cross-flow filtered before bottling.
